What color is black caviar?
It is common knowledge that the roe of sturgeon species is called black. In practice, however, only the roe of the sterlet is truly black. The roe of Beluga and Osetra is often found in a distinctly black hue only in immature states. When spawning occurs, beluga roe turns light gray, while osetra roe takes on a brown-yellow or gray coloring
How is caviar made?
Black caviar is obtained from sturgeon species such as sturgeon, beluga and sterlet. To obtain the caviar, mature females that have already laid caviar are used. The process of making black caviar involves several steps. First the fish is caught and taken to the factory where it is stunned and filleted. Then the caviar is removed from the fish, washed and salted to preserve it. The caviar then goes through several processing stages, including pasteurization and packaging. Finally, the finished caviar goes to the market where consumers can purchase it.
Where does caviar come from?
Imperial Caviar comes from the Chinese province of Zhejiang, south of Shanghai. There are sturgeon farms all over the world, although there are big differences in quality. The majority of the farmed caviar traded today comes from Europe and the Far East.
Where to buy caviar preferably?
Any caviar you buy comes from specially bred sturgeon from fish farms. Wild caviar is no longer available, at least not legally. For good caviar, visit a delicatessen or fish store you trust. How do you eat kaviar best?
First of all: Caviar should never be eaten with silver or metal cutlery as this leads to oxidation and affects the taste of the caviar. Instead, use a small horn spoon or mother-of-pearl spoon. Plastic works too. Take the caviar out of the refrigerator about 5 minutes before serving and only open the can immediately before consumption. Fill a bowl with ice and place the can of caviar in it. However, be careful: the caviar must not come into contact with ice or water!
What do you eat with caviar?
What you serve with caviar depends largely on the type. Generally, blinis, potatoes, boiled eggs, or lightly buttered toast make excellent companions. Some caviar varieties, such as our Imperial Selection, can also be savored on their own. As for drinks, ice-cold vodka, champagne, or a dry white wine complement caviar beautifully.
How should caviar be stored?
Store caviar in the rear part of the refrigerator at a consistently maintained temperature of approximately -2°C to +6–8°C. In our vacuum-sealed tins, the caviar remains fresh for three months under these conditions from the date of receipt.
How long does opened caviar last?
Once you open a can, continue to store it in the refrigeratorand use the caviar within a few days.
